The course provides the basic knowledge of the biology of the different living groups (bacteria, algae, yeasts and other fungi, lichens, higher plants, animals) that are of importance in the food industry, tracing morphological, structural, metabolic, evolutionary and ecological. In exercises will be shown the peculiar elements and characterize the various taxa.

THE COURSE IS ORGANIZED IN THREE PARTS.
AN INTRODUCTORY PART, DURING WHICH THE FOLLOWING TOPICS WILL BE TAUGHT:
INTRODUCTION TO THE CONCEPT OF SPECIES AND RELATED CLASSIFICATION. FIRST LIFE FORMS AND THEIR SPECIATION CONNECTED TO EVOLUTION PROCESSES. PROKARYOTIC AND EUKARYOTIC CELLS. ANIMAL AND PLANT CELLS. LIFE IN AQUATIC AND TERRESTRIAL ENVIRONMENTS.

A TAXONOMIC AND APPLICATIVE PART RELATED TO THE PLANT WORLD DURING WHICH THE FOLLOWING TOPICS WILL BE TAUGHT: ALGAE, FUNGI, LICHENS AND BRYOPHYTA AND THEIR MORPHOLOGY, TAXONOMY AND ECOLOGY. VASCULAR PLANTS (PTERIDOPHYTA, GYMNOSPERMS, ANGIOSPERMS): THEIR MORPHOLOGY, TAXONOMY AND ECOLOGY. BASIC INFORMATION ON THE USE OF SEVERAL SPECIES ACROSS THESE TAXONOMICAL GROUPS AS A SOURCE OF FOOD. INTRODUCTION TO THE FOOD USE OF SOME WILD PLANT SPECIES. INTRODUCTION TO THE NUTRITIONAL VALUE OF SOME PLANT-BASED FOODS.

Type of delivery of the course

THE COURSE ENTAILS FRONTAL AND LAB LESSONS. DURING THE FRONTAL LESSONS, THEORETICAL CONCEPTS ARE EXPLAINED USING CLASS DISCUSSIONS AND POWERPOINT PRESENTATIONS. IN THE LAB, STUDENTS ARE ABLE TO OBSERVE (WITH A MICROSCOPY OR STEREOMICROSCOPY) THE ORGANISMS BELONGING TO THE DIFFERENT TAXA AND PREPARE TEMPORARY DISSECTIONS AND PREPARATIONS. THE COURSE INCLUDES ALSO DIDACTIC VISITS TO PUBLIC AND/OR PRIVATE INSTITUTIONS.

Type of evaluation

THE WRITTEN TEST COMPRISES 30 OPEN OR MULTIPLE-CHOICE QUESTIONS ON GENERAL TOPICS OR ON SPECIFIC BOTANICAL OR ZOOLOGICAL TOPICS. EACH CORRECT QUESTION IS EVALUATED 1 POINT, WHILE PARTIALLY CORRECT QUESTIONS ARE EVALUATED AS FRACTIONS OF POINTS. THE STUDENT PASSES THE WRITTEN TEST IF HIS/HER FINAL SCORE IS 18/30 OR HIGHER. THE ORAL EXAM CONSISTS OF THEORETICAL QUESTIONS ON THE TOPICS OF THE PROGRAM AND THE FINAL GRADE IS CALCULATED AS THE AVERAGE BETWEEN THE SCORE OF THE WRITTEN TEST AND THE ORAL EXAM.

Programme

The animal cell and tissues. Presentation of the main animal taxa in their phylogenetic relationships and in an evolutionary perspective, from unicellularity (ancestral protists) to the evolution of multicellularity (Metazoa) and its diversified organization during evolution also with hints on embryonic development (diblastic and triblastic organisms ; Protostomes and Deuterostomes; types of symmetry; Acelomates, Pseudocelomates and Coelomates organisms). The animal groups (phyla) are presented with their morpho-functional adaptations and their ecology, with attention to use in human nutrition and possible problems related to the food sector (for example food parasites). Main animal groups treated: Parazoa (Porifera); among Eumetazoa the Radiata (eg., Cnidarians) and the Bilateria (eg., Platyhelminthes, Nematodes, Mollusks, Arthropods, Annelids, Bryozoans, Echinoderms, Chordates)

This is a lecture-based course held by the instructor and includes practice exercises.

Type of evaluation

The course includes a written exam and an oral exam. The written exam consists of 30 questions, open or multiple choice, both on general topics and more specifically in the botanical and zoological fields. Correct answers are scored 1 point, while partially correct one are scored as fractions of a point. The student who scores at least 18/30 will pass the written exam and will have access to the oral exam. The oral exam consists of questions about the topics of the program and the grade will be averaged with the result of the written exam. During the course some "assignments" on the topics of the lessons are foreseen in order to stimulate students to study the program regularly and stimulate their critical sense. The completion of the "assignments" involves adding 1/30 to the mean score achieved with written and oral exams.
