In an era where food production and consumption are diversifying, and ethical and environmental variables are shaping consumer choices, the goal is to provide the tools to shape your own language around food. As such, the lectures serve as a continuous forum for discussion between the professor and the student. Assessment is therefore based on project progression during the course, culminating in a final oral examination.”
